Broiled Shrimp

 

3 lbs. shrimp, peeled and deveined

I (15 oz.) can cannellini beans

2 red onions, thinly sliced

2 red peppers, seeded and julienned

2 yellow peppers, seeded and julienned

1 heaping tsp. dried rosemary
5 tbs. olive oil
Salt & Pepper
2 tbs. white wine vinegar

It's Simple:

Spray broiling pan with non-stick cooking spray. Arrange onion, peppers and beans on pan and season with rosemary and salt and pepper and drizzle with olive oil. Broil with pan about 4 inches away from heat for 12 minutes or until edges are slightly blackened turning occasionally.


Add shrimp to onions, peppers and beans  and broil for an additional 3-4 minutes turning once. Toss with white wine vinegar before serving.
