Funky Chocolate Banana Bread (cake)

This is so good, I made it and sent it to Nelson Davis who took it to Thanksgiving dinner with Suzanne Somers. Trust me…if I didn’t think it was good enough, I would never have sent it. Suzanne is a person I grew up admiring and can’t believe how she has maintained her looks and her figure! She is amazing. And that was sending it some 3000 miles away. This bread/cake keeps. If you need it to. But it won’t stay long in your kitchen. It will be gobbled up!

2 c. all-purpose flour
1 c. sucralose
2 t. baking powder
½ t. baking soda
1/4 t. salt
1/2 t. vanilla extract
2 eggs (or ½ c. egg substitute which is what I prefer)
1 ½ c. mashed ripe bananas
1/4 c. applesauce
1/4 c. non-fat yogurt
1/4 c. milk
8 (1 ounce) squares Semi-Sweet chocolate broken into large chunks (do your homework and read chocolate reviews. Some brands are defiantly better than others)

Preheat oven to 350 degrees. Spray loaf pan with non-stick spray

Then in a large bowl combine flour, sucralose, baking powder, baking soda, and salt. Set aside. Coarsely chop baking chocolate bars.

In your mixer add eggs, bananas, yogurt, vanilla, applesauce, and milk in a large bowl until well blended. Add dry ingredients; stir until just moistened. Whatever you do…do not “mix”. Simply combine. Then, stir in chopped chocolate.

Bake for 45 minutes or until toothpick inserted in center comes out clean. Always err on the side of checking a bit early in case your oven bakes at a different temperature than mine. Once the pick comes out clean, Cool 10 minutes. Remove from pan; cool on wire rack.
