Poached Pears
So I love this dessert because it allows me to showcase the incredible Concord grapes grown fresh here in the Fingerlakes region of upstate New York. And…because it’s so elegant looking. I mean elegant. When your guests see this in the wine glass or other dessert dish, they’re going to feel so special. Just the way you want them to feel. And, they’re going to love the taste too. It’s a win/win.
2.5 cups purple Concord grape juice
1 cinnamon stick
3 strips of orange rind
6 pears, peeled but not cored
In a medium saucepan, combine grape juice, cinnamon stick and orange rind. Bring to a boil. Reduce heat and stand pears up in pan. Simmer for about 15 minutes or until easily pierced with a fork. As pears cook occasionally spoon sauce over top of the pears.
Remove pears from pan and refrigerate. Return sauce to a boil and cook down to ½. Once sauce is reduced, remove from heat and chill.
To serve, top pears with sauce and fat-free vanilla frozen yogurt if desired.
