Rice Crust Quiche

Although I’m listing this as main fare, it can easily be a starter too. This is a dish that will floor you. You just wonder how a rice crust is going to come out. Well…crispy on the bottom. Tender on the top. It’s an unexpected way to experience a quiche. And it’s great for those who are gluten free. I use an egg substitute, but you can use farm fresh eggs if you prefer. Just keep in mind you’ll be adding some fat and cholesterol. This is one you want to try…

2 cups cooked brown rice, cooled
½ c. reduced fat shredded cheddar cheese
¼ c. egg substitute
1 tsp. garlic powder
1 tsp. onion powder
½ tsp. salt
¼ tsp. pepper

Filling:
1/2 c. onion, finely diced
½ c. red bell pepper, finely diced
½ c. celery, finely diced
3 cloves of garlic, minced or pressed
½ lb. turkey sausage
1 large egg
¼ c. egg substitute
¼ c. fat free yogurt
½ tsp. salt
½ tsp. hot pepper sauce
¼ c. reduced fat cheddar cheese

To make crust, mix together rice, egg substitute, garlic and onion powder, salt and pepper. Press into pie place sprayed with non-stick cooking spray. Sprinkle bottom of crust with cheddar cheese.

In a skillet, sauté veggies until just softened. Add garlic and sausage and cook till meat is done. In a separate bowl, whisk together egg and egg substitute. Stir in yogurt, salt and pepper sauce. Combine egg mixture with veggies and meat and pour into crust. Sprinkle with cheese and back at 375 degrees for 30 minutes or until center is set.
