BLT Salad

If you love BLTs you’ll love this salad. And, you’ll save yourself the extra carbs the sandwich packs. The bacon adds that fantastic smoky saltiness. The romaine is the perfect vessel for the dressing and the sweetness in the grape tomatoes works so well with the savory elements. Serve this for lunch or dinner. I like it with my frittata, but it would be equally delicious with my rice quiche. Or, simply with eggs. This could also be main fair.

You’ll need:
10 strips cooked bacon, crumbled (if you want to use turkey bacon, or another alternative, feel free)
1 head of romaine lettuce, cut in half
1 pint grape tomatoes, halved

Dressing
2/3 c. fat free buttermilk
6 T. canola mayonnaise
4 T. cider vinegar
Salt
Pepper

In a grill pan (or on a grill) cook lettuce halves until slightly wilted. While lettuce cools, mix all dressing ingredients in separate bowl or shaker. Cut lettuce into bite-sized pieces. Toss lettuce, tomatoes and dressing together in a large bowl. Sprinkle with bacon and serve.
